Satsivi is a food paste in Georgian cuisine made primarily from walnuts and is used in various recipes. The term satsivi is also used as a generic name for a variety of poultry, fish and vegetable appetizers made with the satsivi sauce.
Ingredients:
500 gm of chicken breast
1 cup of ground walnuts
1 tsp of vinegar
1/2 tsp of dried coriander
½ tsp of (utskho suneli) blue fenugreek
2-3 cloves
1/4 tsp of saffron
1/4 tsp of cinnamon
1-2 cloves of garlic
1tsp of flour
1 small onion
Salt, red pepper to taste
½ liters of water
Preparation:
Boil chicken and throw out the initial boiling water. Cut chicken breasts into cubes, place back in the saucepan, cover with one liter of water and boil it again. In the meanwhile chop onions and garlic finely and sauté them in oil. Mix dry ingredients: minced walnuts, flour, salt, pepper, cloves, cinnamon, dried coriander, utskho suneli, saffron into the bowl. Add fried onions and garlic into the mixture as well. Gradually add chicken broth into the bowl and stir until all ingredients well-combined. Pour the walnut mass back into the saucepan and boil until the pieces of chicken are soft and the sauce is thick. When satsivi is almost ready pour 1 tsp of vinegar and blend. You can serve satsivi either with gomi (Georgian cornmeal), mchadi( corn bread), but if you cannot get them, pair satsivi with Italian polenta or with kuskus. You can consume the dish both hot and cold.
