Lobiani

Lobiani is a traditional Georgian dish of bean-filled bread. In Georgia the most popular is Rachuli Lobiani, like a Khachapuri, but with bean and bacon. The word "Lobiani" comes from the Georgian word for beans which is "Lobio"



Ingredients for the dough:

2 cups of water
1 egg
2 table spoons of dry yeast
1kg of flour 
2-3 table spoons of oil
1 table spoon of sugar


Ingredients for the stuffing

400-500g of red beans
250g of ham
Salt and pepper


Preparation:

Boil beans together with ham, then strain off the water, peel the beans (only if you want to - the rind is fully edible), mix them with thinly sliced ham and sprinkle with salt and pepper. Mash the prepared stuffing into paste.

Mix 2 cups of flour with yeast and one teaspoon of sugar, add warm water. Add scrambled eggs, oil and the remaining flour. Knead the tender dough and leave it to rise. Split the dough into 5 parts, distribute the stuffing accordingly, wrap it up and bake it like any ordinary Khachapuri. After baking, grease the top of Lobiani with a fatty piece of ham.
