Kubdari or Kubed

Kubdari or Kubed is a Georgian filled bread dish which is particularly a national dish of the Svans. The bread is leavened and allowed to rise. The filling contains chunks of meat, which can be lamb, kid or pork, Georgian spices and onions.


Ingredients
Dough
  • Flour - 1 kg
  • Dry yeast - 15-20 g
  • Warm milk or water - 120 ml
  • Oil - 50 ml
  • Salt - 1 teaspoon
  • Egg yolk - 2 pieces
Filling
  • Pork - 500 g
  • Beef - 500 g
  • Onions - Chapter 3
  • Dried coriander - 2 teaspoons
  • 2 Teaspoon of cumin
  • Thyme - 2 teaspoons
  • Salt, black pepper, red
  • Pepper - to taste
  • Butter the top of the application - 50 g
Instructions
  1. Slash pieces of meat very finely.
  2. Added onion and oil to slashed meat and mix well about 20-30 minutes.
  3. Roll the kubdari into dough.
  4. Bake for 20-25 minutes.
